Mack’s Shortbread – A Christmas Classic
Mack’s shortbread is a family tradition at Christmas. It’s named after my Great Grannie whose name was actually Sarah but people called her Mack. Don’t ask me!
These shortbread cookies are the best I’ve ever had and are the only ones we make in our family. I’m sharing the recipe and hopefully you will enjoy it with your family this holiday season.

Mack’s Shortbread
Ingredients:
- 1 Cup Butter
- 1 Cup Flour
- 1/2 Cup Corn Startch
- 1/2 Cup Icing Sugar
Method:
- Preheat oven to 300F.
- Cream butter with electric mixer.
- Add other ingredients in order and mix well (You can use an electric mixer to incorporate the dry ingredients but it doesn’t have the same melt in your mouth effect that mixing them in with a spoon does).
- Use about a teaspoon of dough and roll into a ball using your hands.
- Place them on a non-greased cookie sheet and press them down with the back of a spoon. (You will need to dip your spoon in a bit of water so the dough doesn’t stick.)
- Put 1/4 of a maraschino cherry in the center of each cookie
- Bake for 20-25 minutes.

Here is one that has always been a favorite of mine.
Cherry Triangles
Ingredients:
1/3 cup golden margarine
½ cup sugar
1/4 teaspoon salt
1 egg
2 cups flour
Topping:
¼ cup orange juice or brandy
1 tin condensed milk
1 ½ cups chopped pecans
1 cup each red and green cherries halved
¾ cup chopped dates
Method:
Heat oven to 180 deg C.
Cream sugar, salt, egg. Add dry ingredients. Press into 15 x 10 pan. Bake 5 minutes. Spread topping and bake 20 – 25 minutes. Cool and cut. Freezes well.
